Gary started off his acting career on-stage in shows such as You're a Good Man, Charlie Brown (1967). That same year he got a break and landed a role in an episode of the TV show NET Playhouse. Two years later he appeared in the TV series The Good Guys co-starring Bob Denver, Herb Edelman, Joyce Van Patten, Alan Hale Jr., and Jim Backus. In 1970 he starred in the original film M*A*S*H with Donald Sutherland, Elliott Gould, Tom Skerritt, Sally Kellerman, Robert Duvall, and Jo Ann Pflug.

Gary Burghoff starred in the TV show M*A*S*H from 1972 to 1979. The show co-starred Loretta Swit, Harry Morgan, Alan Alda, David Ogden Stiers, Jamie Farr, Mike Farrell, William Christopher, Larry Linville, Wayne Rogers, McLean Stevenson, and Kellye Nakahara. Out of the entire cast of the movie, Burghoff was the only one asked to reprise his role in the spin-off TV series. He was one of the first actors hired for the show and after 8 seasons called it quits to spend more time with his family.

During his run on M*A*S*H he made other appearances on shows such as Love, American Style (1973), the TV movie Twigs co-staring Ed Asner, Conrad Bain, Carol Burnett, Jack Gilford, Pat Hingle, and Alex Rocco (1975), Ellery Queen with Jim Hutton (1976) and The Man in the Santa Claus Suit with Fred Astaire, Bert Convy, and Harold Gould (1979). Gary appeared in The New Adventures of Wonder Woman with Lynda Carter and Lyle Waggoner (1978). Prior to becoming popular television, Gary performed as a drummer in a band which featured Lynda Carter as the lead singer.

After M*A*S*H, Gary formed his own All-Star Dixieland Jazz Band and has written over 100 songs. He has played various roles in TV shows over the years such as the TV movie Casino with Mike Conners, Barry Van Dyke, Lynda Day George, and Robert Reed of The Brady Bunch Fame (1980), two episodes of Fantasy Island with Ricardo Montalban, Hervé Villechaize and Carol Lynley (1980), The Love Boat with Gavin MacLeod, Bernie Kopell, Fred Grandy, and Ted Lange (1981).
He starred in an attempted spinoff of M*A*S*H in 1984 entitled W*A*L*T*E*R which was unsuccessful. In 1995 he starred in the movie Behind the Waterfall. He even directed a couple of plays.
Burghoff starred in the film Doubles in 1991, followed by Small Kill with Jason Miller, Fred Carpenter, Donnie Kehr, and Rebecca Ferratti (1992), and then Behind the Waterfall with Luke Baird and Alyssa Hansen (1995).
In 1999, Gary began hosting a public television series Pets: Part of the Family. In 2000, he was part of an acting group that toured the Nation in Neil Simon's, Last of the Red Hot Lovers. Gary is now, and since 1992, an avid wildlife artist and has toured across the US displaying his paintings. More recently, he starred in the film Daniel's Lot with Joni Adahl and Sam Bauso (2010).
